Hello kids,

I could not post last week as I was out of town.

You all saw butter of course...
Also you saw Ghee probably.


You saw oil also. different kinds of oil?

What is the difference?

Ghee and butter are solid or semisolid at normal temperatures. oil is liquid.

If you heat the ghee or butter it will also become liquid. did you ever think why?

Similarly you have water,  if you put into the fridge it becomes ice...
and if you heat ice it will become water...
if you heat further it will become steam..

You are aware that idly and pizza are fluffy.

Dosa is crisp

Why the difference?

Idly and pizza are made from dough fermented overnight.
This creates air bubbles inside which makes them fluffy.

Also, they are either cooked in steam or baked.

Dosa, on the other hand is shallow fried...that is cooked in oil on a pan, which makes it crisp.

The second thing is pizza can be made with different toppings, which gives it different tastes, just like my wig gave me a different look.

You have seen that the milk in the saucer cools quicker.

What is the difference?

The surface of the milk in the saucer is larger than that in the tumbler.

So the wider the container the faster it cools.

Why?

Because  more milk is exposed to air in the saucer.

This means the greater the exposure to air, the faster it cools.

The tumbler is made of  a metal and the mug is made of porcelain, a ceramic.

Now why should a metal get hot and why a ceramic should not , is another story. That I will tell a little later.

For a change, let us check what happens if we pour the milk in a saucer.

See which cools faster.
The milk in the mug or that in the saucer.
